Ingredients
  

Graham Crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cups granulated sugar
  • 0.5 cups unsalted butter melted

Cheesecake Filling

  • 3 packages cream cheese softened
  • 0.75 cups granulated sugar
  • 3 large eggs
  • 1 cup mashed ripe bananas about 2 medium
  • 0.25 cups sour cream
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.5 cups chopped walnuts or pecans toasted
  • 0.5 cups caramel sauce plus extra for drizzling

Topping

  • whipped cream optional for topping
  • sliced banana optional for garnish

Instructions
 

Preparation

  • Preheat oven to 325°F (163°C).
  • Mix graham cracker crumbs, sugar, and melted butter. Press into pan and bake.
  • Beat cream cheese and sugar, add eggs, bananas, sour cream, vanilla, cinnamon, salt. Fold in nuts and caramel.
  • Pour filling over crust and bake until set. Cool in oven, then chill.
  • Drizzle with caramel, top with whipped cream and banana slices.

Notes

Use very ripe bananas for best flavor. Toasting nuts enhances their flavor. Cheesecake is best served chilled but can be brought to room temperature before serving.
