Ingredients
  

CHICKEN

  • 1 large boneless, skinless chicken breast cut into small bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon sweet paprika
  • ½ teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon sea salt flakes
  • ½ teaspoon freshly cracked black pepper

FLATBREADS

  • 4 pieces flatbreads
  • ¼ cup store-bought BBQ sauce (60 ml)
  • 1 cup shredded mozzarella (150 g)
  • 1 small red onion finely sliced
  • 1 small capsicum (bell pepper) finely sliced
  • 1 tablespoon freshly chopped coriander (cilantro) to garnish (optional)

Instructions

  • Marinate the chicken by placing it in a bowl with olive oil, sweet paprika, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss until evenly coated.
  • Cook the chicken in a frying pan over medium-high heat for 6 minutes, or until browned and cooked through. Set aside.
  • Preheat the oven to 200°C (400°F) fan-forced (220°C/425°F conventional).
  • Line a baking tray with paper and place flatbreads on it. Spread a thin layer of BBQ sauce over each flatbread.
  • Sprinkle shredded mozzarella evenly over flatbreads.
  • Top with cooked chicken, red onion slices, and capsicum slices.
  • Bake for 8–10 minutes, or until cheese is melted and edges are golden. Swap trays halfway if using two.
  • Serve immediately, sprinkled with coriander if using.

Notes

Chicken thighs can be used instead of chicken breast.
