Ingredients
  

Pasta and Broccoli

  • 2 cups Pasta Any shape you prefer
  • 1 cup Broccoli florets Fresh or steamed
  • 1 cup Cherry tomatoes Halved

Dressing

  • ¼ cup Olive oil
  • 2 tablespoons Lemon juice Freshly squeezed
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Optional Toppings

  • ¼ cup Parmesan cheese Grated
  • ¼ cup Red onion Diced

Preparation

  • Cook pasta according to package instructions. Drain and let cool.
  • In a large bowl, combine broccoli and cherry tomatoes.
  • Make the dressing by whisking together olive oil, lemon juice, salt, and pepper.
  • Add cooled pasta to the bowl and drizzle with dressing.
  • Toss gently to combine. Optional: top with Parmesan cheese and red onion.
