Ingredients
  

Vegetables and Fruits

  • 4 cups broccoli florets cut into bite-sized pieces
  • 1 cup apple chopped
  • ¼ cup purple onion diced

Other Ingredients

  • ½ cup dried cranberries
  • cup roasted and salted pepitas

Dressing

  • ½ cup mayonnaise use high-quality, such as Duke's
  • 1 tablespoon honey
  • 1 tablespoon red wine vinegar
  • ½ teaspoon salt
  • teaspoon coarse ground black pepper

Instructions
 

Preparation

  • Cut broccoli crowns into bite sized pieces. In a large bowl combine, broccoli, apple and purple onion. Toss.
  • In a small bowl, whisk together mayonnaise, honey, red wine vinegar, salt and pepper.
  • Pour prepared dressing over salad. Gently toss until salad is evenly dressed. Mix in dried cranberries. Cover and chill for one hour before serving.
  • Stir in pepitas just before serving.

Notes

Garnish top with extra craisins, apples and pepitas. Store covered in the refrigerator for up to 4 days.
