Tomatoes

  • 2 cups Cherry Tomatoes Cut in half or left whole

Beans

  • 1 can Butter Beans Canned with liquid

Dairy Alternatives

  • 4 oz Vegan Cream Cheese Violife or Kite Hill recommended

Aromatics

  • 1 medium Shallot Finely diced
  • 2 cloves Garlic Minced

Condiments

  • 2 tablespoon Olive Oil For cooking
  • to taste Salt
  • to taste Pepper

Herbs

  • 1 cup Fresh Basil Thinly sliced

Instructions
 

Cooking Steps

  • Heat the olive oil in a wide shallow pan.
  • Add the tomatoes, salt, and pepper. Cook at medium to high heat until they burst, about 5-8 minutes.
  • Press down on larger tomatoes with a spatula to release juices.
  • Add the finely diced shallot and minced garlic to the pan and sauté for about 3 minutes.
  • Pour in the butter beans with their juices and stir. Bring to a simmer for about 5 minutes.
  • Add in the vegan cream cheese and stir until fully mixed.
  • Turn off the heat and mix in the fresh basil.

Notes

Organic butter beans are recommended. Substitute shallots with half a small white onion if needed.
