Dairy

  • ½ cup milk
  • 1 cup cup heavy whipping cream
  • ½ cup grated Parmesan cheese

Chicken

  • 4 pieces skinless, boneless chicken breasts

Vegetables and Herbs

  • 1 clove garlic (½ teaspoon minced)
  • ¼ cup sun-dried tomatoes , chopped
  • ¼ cup chopped fresh basil
  • teaspoon black pepper

Fats

  • 3 tablespoons butter

  • ½ cup dried Italian bread crumbs
  • ½ cup chicken broth

Cooking Instructions

  • Place milk and bread crumbs in separate, shallow bowls. Ensure chicken breasts are thin, either by filleting or pounding them.
  • In skillet, heat butter to medium heat. Dip chicken in milk, then coat with crumbs. Cook chicken in butter until juices run clear, about 10 minutes. Remove and keep warm.
  • Add garlic to the pan and cook for 30 seconds. Add chicken broth to the skillet. Bring to a boil, stirring to loosen browned bits. Stir in cream and sun-dried tomatoes; boil for 1 minute. Reduce heat.
  • Add Parmesan cheese, basil, and pepper. Stir and cook until heated through, about 3-5 minutes for a thicker sauce.
  • Serve chicken with sauce poured over the top.

Notes

For a thicker sauce, cook it longer until desired consistency is reached.
