Ingredients
  

Dairy and Eggs

  • 1.5 cups milk dairy or nondairy
  • 2 large eggs

Sweet Ingredients

  • 0.5 cups pure maple syrup
  • 0.5 cups unsweetened applesauce
  • 0.75 cups chocolate chips regular size or mini

Oats and Binders

  • 3.25 cups old-fashioned whole rolled oats
  • 0.5 cups creamy or crunchy almond butter can substitute with peanut butter
  • 0.33 cups ground flaxseed

Dry Ingredients

  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 0.25 teaspoon salt

Instructions
 

Baking Instructions

  • Preheat oven to 350°F (177°C). Generously spray a 12-count muffin pan with nonstick spray. If using muffin liners, spray them with nonstick spray.
  • In a large bowl, whisk all of the ingredients together, except for the chocolate chips. Using a spoon or silicone spatula, fold in the chocolate chips. Spoon batter evenly into muffin cups, filling all the way to the top.
  • Bake for 28–30 minutes or until the edges are lightly browned and tops appear set. If the tops are browning very quickly, tent a piece of aluminum foil over the muffin pan.
  • Cool for 5–10 minutes before serving.
  • Cover leftover oatmeal cups tightly and refrigerate for up to 1 week.

Notes

Make ahead and freezing instructions: Bake the oatmeal cups, cool completely, and store in the refrigerator all week. Reheat in the microwave or oven. Freeze for up to 3 months. Thaw before serving. Do not make oatmeal batter ahead of time as the oats will soak up the liquid.
