- 1 large egg
- 2 small/medium ripe bananas or 1 extra-large, about ½ heaping cup mashed
- 0.5 cup light brown sugar packed
- 0.25 cup granulated sugar
- 0.25 cup unsalted butter softened
- 2 teaspoons vanilla extract
- 1.5 cups old-fashioned whole rolled oats
- 1.25 cups all-purpose flour
- 0.5 teaspoon cinnamon optional
- 0.5 teaspoon baking soda
In a stand mixer fitted with the paddle attachment, combine egg, bananas (whole), sugars, butter, and vanilla. Beat on medium-high speed for about 4 minutes until well combined.
Scrape down the sides, add oats, flour, cinnamon, baking soda, and beat on low until just combined, about 1 minute.
Scrape down the sides again, add chocolate chips, and beat on low for about 30 seconds until just combined.
Using a large cookie scoop or your hands, form approximately 14 equal-sized mounds of dough.
