Ingredients
  

  • 12 ounces egg noodles
  • 2 tablespoons butter
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1.5 cups frozen mixed vegetables, thawed
  • 1 teaspoon dried thyme
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cups cooked chicken breast, shredded
  • to taste salt
  • to taste pepper
  • 2 tablespoons fresh parsley, chopped optional garnish

Instructions
 

  • Cook the egg noodles according to package instructions until al dente. Drain and set aside.
  • In a large skillet, melt the butter over medium heat. Add the onion, garlic, and mixed vegetables. Season with thyme, salt, and pepper. Cook until onions are soft, about 5 minutes.
  • Sprinkle the flour over the veggie mixture and stir until coated. Pour in the chicken broth and heavy cream. Stir and let simmer until thickened, about 5 minutes.
  • Add the cooked noodles and shredded chicken back to the skillet. Stir until everything is coated in the sauce. Taste and adjust seasoning if necessary.
  • Sprinkle fresh parsley on top for garnish before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 5 days. Reheat with a splash of cream or broth to restore creaminess.
