  • 1 cup cottage cheese (full-fat, small curd)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 14.5 oz can of diced tomatoes (no salt added)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • ½ teaspoon dried oregano
  • ¼ cup fresh basil leaves, packed
  • ¼ cup grated Parmesan cheese
  • ¼ cup pasta water (save from boiling pasta)

  • Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, but not browned.
  • Pour in diced tomatoes and their juice, add salt, black pepper, red pepper flakes (if using), and dried oregano. Stir and let simmer for 5-7 minutes until thickened slightly.
  • Transfer the tomato mixture to a blender. Add cottage cheese, fresh basil leaves, and grated Parmesan. Blend until completely smooth and creamy, about 30 seconds to 1 minute.
  • Pour the blended sauce back into the skillet. Stir in reserved pasta water and warm gently for 2-3 minutes until heated through.
  • Toss with pasta or spoon over roasted veggies or grilled chicken. Top with more fresh basil and Parmesan if desired.

Notes

This sauce can be blended ahead and stored in the fridge for up to 3 days. Not freezer-friendly due to dairy texture changes.
