Ingredients
  

Pasta

  • 150 g pasta of your choice per person for fresh pasta; 100g for dried

Sauce Base

  • 2 whole heads garlic roasted
  • 2 tablespoon olive oil
  • 30 g butter cubed
  • 0.5 teaspoon pepper
  • 1 cup cream single or heavy cream
  • 2-3 tablespoon freshly squeezed lemon juice
  • 1 zest lemon
  • 50 g parmesan finely grated
  • extra zest to serve
  • dried paprika flakes to serve (optional)

Cooking Instructions

  • Preheat your oven to 200°C (400°F).
  • Prepare your garlic bulbs. Take off the outer papery layers and cut the top off horizontally.
  • Drizzle the top with olive oil, wrap in foil, and roast in the oven for about 45 minutes until soft.
  • Let the garlic cool, then squeeze out the paste.
  • Cook your pasta in well salted boiling water.
  • Melt the butter in a frying pan over medium heat.
  • Add the pepper and stir.
  • Add the garlic paste and whisk in to combine.
  • Add the cream and whisk, ensuring it simmers gently.
  • Add the lemon juice and zest, whisk again.
  • Gradually add parmesan, whisking until melted.
  • Let it simmer for a couple of minutes until it thickens slightly.
  • Add cooked pasta and a ¼ cup of pasta water, letting it bubble for a minute.
  • Adjust thickness by adding more pasta water if necessary.
  • Top with extra lemon zest and paprika flakes before serving.

Notes

The amount of lemon and garlic can be adjusted to taste. If dried paprika flakes are unavailable, use chili flakes or smoked paprika instead. This sauce serves three generous portions.
