Ingredients
  

  • 4 pieces zucchini squash sliced into ⅛-inch rounds
  • Kosher Salt
  • 1 tablespoon Greek extra virgin olive oil Such as Private Reserve
  • Harissa spice blend optional
  • 1 recipe Tzatziki sauce for serving

Instructions
 

  • Make Greek Tzatziki sauce according to the recipe and refrigerate.
  • Slice zucchini into ⅛-inch rounds using a mandoline for evenness.
  • Spread zucchini slices on paper towel, sprinkle with salt, cover, and weigh down to remove excess water for 15 to 20 minutes.
  • Preheat oven to 245 degrees F.
  • Line sheet pan with parchment paper, brush lightly with olive oil, and arrange zucchini slices in a single layer.
  • Brush zucchini with olive oil and sprinkle with harissa spice blend.
  • Bake for 1 ½ to 2 hours until crisp and golden, removing chips as they brown.
  • Serve warm or at room temperature with tzatziki sauce.

Notes

Store zucchini chips in zip lock bags for up to a couple of weeks. Recommended to use Private Reserve Greek extra virgin olive oil and Harissa spice blend for best results.
