Crockpot Cowboy Chili: Easy Turkey Bacon and Chicken Ham Delight

Ingredients
  

  • 1 lb ground beef can substitute with turkey or chicken
  • 1 can (15 oz) black beans drained and rinsed
  • 1 can (15 oz) kidney beans drained and rinsed
  • 1 can (15 oz) corn drained
  • 1 can (15 oz) diced tomatoes
  • 1 small can (6 oz) tomato paste
  • 1 cup beef broth
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • Optional toppings: shredded cheddar, sour cream, green onions

Instructions
 

  • In a skillet over medium heat, cook the ground beef until fully browned. Break it up as it cooks. Drain the grease.
  • Add the cooked beef, both beans, corn, diced tomatoes, tomato paste, beef broth, onion, garlic, and all spices to the Crockpot. Stir everything together.
  • Put the lid on and let it cook on low for 6-8 hours (or high for 3-4 hours).
  • Ladle into bowls and top with shredded cheese, a dollop of sour cream, and a sprinkle of green onions. Serve warm!

Notes

Chili tastes even better the next day. Store leftovers in an airtight container for up to 4 days. Freezes great!
