Ingredients
  

Shortbread Cookie Base

  • 1 cup Unsalted butter room temperature
  • ½ cup Powdered sugar
  • 2 cups All-purpose flour
  • 1 cup Finely chopped pistachios roasted, unsalted
  • 1 teaspoon Vanilla extract
  • ¼ teaspoon Salt small pinch

Instructions
 

Preparation

  • Cream together the unsalted butter and powdered sugar until light and fluffy.
  • Sift the flour and add it to the butter mixture. Mix until combined, then fold in the finely chopped pistachios.
  • Divide the dough into two portions. Roll into logs, wrap in plastic, and refrigerate for at least 2 hours.
  • Preheat oven to 350°F (175°C). Slice the dough into ¼-inch thick rounds and place on a parchment-lined baking sheet.
  • Bake for 10-12 minutes until edges are lightly golden. Let cool on the baking sheet before transferring to a wire rack.

These cookies can be stored in an airtight container for up to 5 days at room temperature or frozen for up to 3 months.
