Ingredients
  

  • 1.5 pounds ground beef lean or 80/20 for flavor
  • 1 large yellow onion diced
  • 2 cloves garlic minced
  • 2 cans (15 oz) kidney beans drained and rinsed
  • 1 can (15 oz) black beans drained and rinsed
  • 2 cans (14.5 oz) diced tomatoes with juice
  • 1 can (6 oz) tomato paste
  • 2 tablespoons chili powder adjust to taste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper freshly ground
  • 1 cup beef broth

Instructions
 

  • Brown the ground beef in a skillet over medium heat, then drain excess fat.
  • Add the browned beef, diced onion, minced garlic, drained beans, diced tomatoes, tomato paste, herbs, and broth into the slow cooker.
  • Stir until combined and season with salt, pepper, chili powder, cumin, and smoked paprika.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Adjust seasoning to taste before serving.

Notes

This chili recipe is forgiving; feel free to add herbs or extra beans you have on hand. It’s delicious with or without meat.
