Ingredients
  

Dough

  • 2 cups all-purpose flour spooned & leveled
  • 0.25 cups granulated sugar
  • 0.5 teaspoon salt
  • 0.75 cups whole milk
  • 3 Tablespoons unsalted butter
  • 2.25 teaspoons Platinum Yeast from Red Star or any instant yeast (1 standard packet)
  • 1 large egg at room temperature

Filling

  • 3 Tablespoons unsalted butter extra softened
  • 0.33 cups brown sugar packed, light or dark
  • 1 Tablespoon ground cinnamon

Cream Cheese Icing

  • 4 ounces cream cheese full-fat, softened to room temperature
  • 2 Tablespoons unsalted butter softened to room temperature
  • 0.67 cups confectioners’ sugar
  • 1 teaspoon pure vanilla extract

Instructions
 

Make the Dough

  • Whisk the flour, sugar, and salt together in a large bowl. Set aside.
  • Combine the milk and butter together in a heatproof bowl. Microwave or use the stove and heat until melted and warm to the touch (about 110°F/43°C). Whisk in the yeast until it has dissolved. Pour mixture into the dry ingredients, add the egg, and mix until a soft dough forms.
  • Transfer dough to a lightly floured surface. Knead the dough for 3-5 minutes until smooth. Place in a greased bowl, cover loosely, and let rest for about 10 minutes.

Fill and Rise

  • Roll the dough into a 14x8-inch rectangle. Spread softened butter on top. Mix cinnamon and brown sugar, then sprinkle over the dough. Roll up the dough and cut into 10-12 rolls.
  • Arrange rolls in a greased baking pan, cover with foil or a towel, and let rise for 60-90 minutes or until doubled in size.

Bake

  • Preheat the oven to 375°F (190°C). Bake for 24-27 minutes until lightly browned. If tops brown too quickly, tent with foil.
  • Check internal temperature is around 195-200°F (91-93°C) when done.

Make Icing

  • Beat cream cheese on high speed until smooth. Add butter and mix until combined. Beat in confectioners' sugar and vanilla until combined.
  • Spread icing over warm rolls and serve immediately.

Storage

  • Cover leftover rolls tightly and store at room temperature for a day or in the refrigerator for up to 5 days.

Notes

This dough can be made the night before and refrigerated overnight. Rolls can be frozen for up to 3 months.
