  • 3 tablespoons honey Use high-quality honey for best flavor.
  • 2 tablespoons balsamic vinegar Balances sweetness of the honey.
  • 2 cloves garlic, minced Adds a savory depth to the dish.
  • 1 teaspoon dried thyme Substitutable with fresh thyme if available.
  • Salt and freshly ground black pepper To taste; enhances natural flavors.

Instructions
 

  • Preheat your oven to 400°F (200°C). Wash and trim the green beans, snapping off the stem ends. Peel and cut whole carrots into 1-inch thick pieces. Ensure vegetables are similar in size for even cooking.
  • In a small bowl, whisk together the olive oil, honey, balsamic vinegar, minced garlic, dried thyme, salt, and pepper until well combined.
  • Place the prepared carrots and green beans in a bowl. Pour the honey glaze over the vegetables and toss gently to coat evenly.
  • Spread the glazed vegetables in a single layer on a baking sheet. Avoid overcrowding for proper roasting.
  • Roast for 20-25 minutes, checking for doneness around 20 minutes.
  • For extra caramelization, broil the vegetables for the last 1-2 minutes, keeping a close eye to prevent burning.
  • Let the vegetables rest for a minute before serving. Garnish with parsley or sesame seeds if desired.
