Ingredients

  • 1 pound cod filets

Breading

  • ½ cup all-purpose flour
  • 2 large eggs
  • ½ teaspoon salt
  • 1 cup plain panko bread crumbs
  • ½ cup grated parmesan cheese
  • 2 teaspoons old bay seasoning
  • ½ teaspoon garlic powder
  • olive oil spray

Seasoning

  • to taste ground black pepper

Instructions
 

Preparation Steps

  • Season cod filets with salt and ground black pepper on both sides.
  • Create a breading station with 3 bowls: add flour to the first bowl and dip each cod filet in the flour first.
  • In the second bowl, whisk together eggs and salt, then dip the floured filet in the egg mixture.
  • In the third bowl, combine panko bread crumbs, parmesan cheese, old bay seasoning, and garlic powder, then dip each egg-coated filet in the panko mixture.
  • Spray the bottom of the air fryer basket with olive oil spray, then place the breaded filets in the basket.
  • Cook at 400 degrees Fahrenheit for 10 minutes, carefully flip, and continue to cook for an additional 3-5 minutes until internal temperature reaches 145 degrees Fahrenheit.
