Ingredients
  

Beef and Seasoning

  • 2 lb beef
  • 1 tablespoon paprika 7g
  • 1 teaspoon black pepper 6g
  • 1 teaspoon dried coriander (cilantro) 0.1g
  • 1 teaspoon garlic powder/granules 3g
  • 1 teaspoon onion powder 2g
  • 1 teaspoon pink salt 6g
  • ½ teaspoon red chilli flakes 1g
  • 1-2 tablespoon homemade browning sauce 15g
  • 1 small onion chopped
  • 3 scallions chopped
  • 3 garlic cloves chopped

Cooking Ingredients

  • 2 tablespoon coconut oil
  • 4-5 sprigs fresh thyme tied together
  • 1 red or green bell pepper sliced
  • 2 large carrots sliced or halved
  • 1 large sweet potato peeled and chopped
  • 3 pimento berries or ¼ teaspoon of ground allspice
  • 2 ½ cups hot water 590ml
  • 1 large tomato chopped
  • 1 tablespoon tomato puree 16g

Cooking Instructions

  • If using a spice/coffee grinder, add all beef seasoning ingredients to the grinder and mill into a fine consistency; skip this step if not applicable.
  • Place washed beef in a large bowl and add all beef seasoning ingredients.
  • Add the browning sauce, chopped onions, garlic, and scallions.
  • Work the seasoning into the beef to create a wet rub, preferably using your hands.
  • Set aside to marinate for several hours or overnight.
  • Melt the coconut oil on medium heat in a Dutch pot and add the marinated beef.
  • Stir to evenly brown all beef pieces.
  • Add thyme, reduce heat to low, and cover.
  • Continue to cook for 10-15 minutes, monitoring liquid levels.
  • If too much liquid, increase heat to high and let some evaporate while stirring occasionally.
  • Add the onion mixture and sauté until soft.
  • Add bell peppers, carrots, pimento, sweet potatoes, and scotch bonnet; stir to combine.
  • Pour in 1 ½ cups of hot water used to marinate the meat.
  • Add chopped tomato and tomato puree, stir again, and bring to a boil.
  • Reduce heat to low, cover, and let cook for up to an hour, adding water as needed.
  • Taste and adjust seasoning before serving.

Notes

Feel free to freeze leftovers for up to 3 months. For a larger quantity, use 1 ½ - 2 lbs of beef. Adjust browning sauce based on type used. Follow specific crockpot and stovetop instructions for variations.
