Ingredients
  

  • 2 cups leftover mashed potatoes
  • 1 large egg
  • cup all-purpose flour
  • 2 tablespoons chives, minced
  • 1 cup cheddar cheese, grated
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions
 

Preparation

  • In a medium bowl, combine the mashed potatoes, egg, all-purpose flour, chives, cheese, salt, and pepper. Mix until it holds its shape.
  • Place a few paper towels on a large plate to transfer the pancakes once fried.

Notes

If the mixture is too sticky, add more flour a tablespoon at a time until the desired texture is reached.
