Vegetables

  • 1 medium red bell pepper thinly sliced
  • ½ medium yellow onion diced
  • 10 whole or ½ cup pepperoncini peppers sliced or whole

Chicken and Dairy

  • 1.5 pounds boneless, skinless chicken breasts about 3 pieces, sliced
  • 1 ounce Parmesan cheese about ½ cup freshly grated or ⅓ cup store-bought
  • ½ cup heavy cream

Spices and Seasonings

  • 1.25 teaspoon kosher salt divided
  • ¼ teaspoon black pepper freshly ground
  • 3 tablespoons olive oil divided
  • 2 teaspoons Italian seasoning
  • ½ cup low-sodium chicken broth

Cooking Steps

  • Thinly slice the red bell pepper and dice the yellow onion. Slice the pepperoncini peppers into rings and grate the Parmesan cheese.
  • Slice the chicken breasts across the grain into ½-inch-thick slices, season with salt and pepper, and toss to coat.
  • Heat olive oil in a large skillet, add half the chicken, and cook until browned and cooked through. Transfer to a plate and repeat with remaining chicken.
