  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cups diced potatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped fresh cilantro (optional)

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent.
  • Add the ground beef to the skillet, cooking until browned and fully cooked. Drain any excess fat.
  • Stir in the diced red, yellow, and green bell peppers, along with the diced potatoes. Cook for about 5 minutes, allowing the vegetables to soften slightly.
  • Season the mixture with ground cumin, chili powder, salt, and pepper, stirring to combine.
  • Transfer the beef and vegetable mixture to a baking dish, spreading it evenly.
  • Sprinkle the shredded cheddar cheese over the top of the mixture.
  • Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and the cheese is melted and golden brown.
  • Remove from the oven and let it cool slightly before serving. Garnish with chopped fresh cilantro if desired.

Notes

For a spicier version, add a diced jalapeño or cayenne pepper. Substitute ground turkey or chicken for a lighter option. For vegetarian, use black beans or a meat substitute.
