Ingredients
  

  • 2 to 3 lbs beef chuck roast, cut into large chunks
  • 1 packet onion soup mix
  • 1 packet brown gravy mix
  • ¼ cup apple cider vinegar
  • 4 cups prepared mashed potatoes
  • 6 to 8 slices prepared garlic bread

Instructions
 

  • Cut the beef chuck roast into large, uniform chunks about 2-3 inches in size.
  • Place the beef chunks in your slow cooker and sprinkle both the onion soup mix and brown gravy mix evenly over the meat.
  • Pour the apple cider vinegar over the seasoned beef.
  • Cover the slow cooker and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the beef is fork-tender and easily shreds.
  • About 30 minutes before serving, prepare your mashed potatoes according to package directions and warm your garlic bread.
  • Spoon the tender beef and gravy over individual portions of mashed potatoes and serve alongside warm garlic bread.

Notes

Cut the beef into larger chunks to prevent overcooking. Optionally, you can brown the beef chunks before slow cooking for added flavor. For thicker gravy, mix cornstarch with cold water and stir into the slow cooker during the last 30 minutes. Avoid lifting the lid unnecessarily during cooking.
