Ingredients
  

Meat

  • 3 pounds bone-in chicken thighs extra fat trimmed

Seasonings

  • 2 teaspoons salt
  • 1 teaspoon ground black pepper

Cooking Oil

  • olive oil for searing

Vegetables

  • 1 medium yellow onion diced
  • 6 cloves garlic minced
  • 4 medium carrots peeled and sliced
  • 3 medium red potatoes quartered or baby red potatoes
  • ¼ cup finely chopped Italian parsley

Herbs & Spices

  • 1.5 tablespoons tomato paste
  • 2 teaspoons fresh thyme leaves or ¾ teaspoon dried
  • ½ teaspoon fresh rosemary minced or ¼ teaspoon dried
  • 3 pieces bay leaves dried or fresh

Liquid

  • 5 cups chicken broth divided plus more as needed

Other

  • cup all-purpose flour
  • 1 cup frozen peas

Instructions
 

Cooking Instructions

  • Season chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat and sear chicken on both sides until golden brown. Transfer to a large slow cooker.
  • In the same skillet, add more olive oil and sauté onions and carrots for 5 minutes. Scrape the brown bits from the pan to deglaze.
  • Add minced garlic, thyme, and rosemary, sauté until fragrant for 1-2 minutes. Stir in tomato paste and deglaze with chicken broth. Transfer to slow cooker with chicken.
  • Add potatoes and bay leaves to slow cooker. Season with salt and pepper, then add 4 cups of chicken broth. Cover and cook on HIGH for 4 hours.
  • 3.5 hours in, make a slurry by mixing flour with chicken broth. Add slurry and peas to slow cooker and cook for an additional 30 minutes.
  • Remove chicken, shred with a fork, discard bones, then return chicken to slow cooker. Stir in parsley and adjust seasoning as needed.
  • Serve warm with bread or biscuits.

Notes

If your slow cooker has a sauté function, you can use that instead and make everything in one pot. Cooking on HIGH is recommended for 4 hours.
