Base Ingredients

  • 1 tablespoon neutral oil
  • 1 count red onion, chopped
  • 1 count green bell pepper, chopped
  • 1.5 lbs ground turkey (93% lean ideal)
  • 2 cloves garlic, minced
  • 2 tablespoon tomato paste
  • 28 oz canned chopped tomatoes
  • 15 oz canned black beans, rinsed
  • 15 oz canned kidney beans, rinsed
  • 1.5 cups low-sodium chicken broth
  • 2 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt & pepper to taste

Garnish

  • Shredded cheddar
  • Green onions

Cooking Steps

  • In a skillet, cook onions & peppers in oil for 3–4 mins. Add turkey, break up, cook until browned. Stir in tomato paste for 1 min. Transfer to slow cooker.
  • Add garlic, tomatoes, beans, broth, spices. Stir to combine.
  • Cook on LOW 6–8 hrs or HIGH 3–4 hrs. Stir halfway if home.
  • Season to taste. Stir in lime juice or vinegar to brighten.
  • Ladle into bowls. Top with cheese, green onions—or avocado!

Notes

Add sweet potato cubes, corn, or zucchini for veggie boost. Use ground beef for a richer version. Creamy variation? Stir in ¼ cup cream cheese at the end. Freezes great—cool first, store flat in bags.
