Ingredients
  

Cooking Oil and Chicken

  • 1 tablespoon olive oil
  • 1.5 pounds boneless skinless chicken thighs, cut into 1 inch pieces
  • to taste freshly ground salt and pepper

Liquids

  • 2 cups chicken broth
  • 0.5 cup dry white wine or additional chicken broth if preferred
  • 1 tablespoon worcestershire sauce ensure gluten-free if necessary
  • 1 teaspoon balsamic vinegar
  • 0.5 cup unsweetened almond milk or heavy cream or regular milk will work

Herbs and Spices

  • 2 teaspoons chopped fresh rosemary fresh is best!
  • 2 teaspoons chopped fresh thyme fresh is best!
  • 0.5 teaspoon dried oregano
  • 1 teaspoon salt plus more to taste
  • to taste freshly ground black pepper

Vegetables

  • 6 cloves garlic, finely minced
  • 1 large yellow onion, cut into chunks
  • 3 large carrots, peeled and cut into ½-inch diagonal slices
  • 1 pound yukon gold potatoes, diced into ½ inch cubes
  • 0.25 cup all purpose flour or sub all purpose gluten free flour
  • 0.67 cup frozen peas

Instructions
 

Preparation Steps

  • Add 1 tablespoon olive oil to a large skillet and place over high heat. Add chicken pieces and generously season with salt and pepper, brown the meat for about 5-6 minutes. Transfer to a large 6 or 8-quart slow cooker.
  • Add chicken broth, dry white wine, worcestershire sauce, balsamic vinegar, thyme, rosemary, dried oregano, and salt and pepper to the slow cooker. Stir together with the chicken, then add garlic, onion, carrots, and potatoes. Cover and cook on low for 7-8 hours or on high for 4-5 hours.
  • Remove ½ cup of chicken broth and stir in ½ cup of milk and whisk in ¼ cup flour until smooth. Add mixture back to the slow cooker, stir in frozen peas, and cook uncovered on HIGH for 15-20 more minutes until thickened.
  • Taste and season with more salt and pepper if necessary. Serve immediately with fresh thyme, toasted bread, or biscuits.

Notes

Fresh herbs are highly recommended for better flavor. This stew can be adjusted to be gluten-free by using appropriate substitutes for the sauce and flour.
