Ingredients
  

Main Ingredients

  • 1.5 cups warm water (around 100°F (38°C))
  • 2.25 teaspoons instant or active dry yeast (1 standard packet)
  • 1 tablespoon brown sugar or granulated sugar
  • 1 teaspoon salt
  • 1 tablespoon unsalted butter (melted and slightly cool)
  • 3.75-4 cups all-purpose flour (plus more for hands and work surface)
  • ½ cup baking soda
  • 9 cups water
  • to taste coarse sea salt (for topping)

Instructions
 

Making the Dough

  • Whisk warm water, yeast, and sugar together in the bowl of your stand mixer. Allow to sit for 5 minutes until foamy. Add salt, melted butter, and 3 cups of flour. Beat on low for 1 minute, then add ¾ cup of flour and continue mixing until the dough comes together.
  • Knead the dough for 5 minutes, either in the mixer or by hand on a floured surface. The dough should be soft and slightly tacky, passing the windowpane test if kneaded correctly.

Resting and Shaping

  • Cover the dough with a towel and allow it to rest for 10-30 minutes while you prepare the baking soda bath.
  • Preheat your oven to 400°F (204°C) and line baking sheets with parchment paper. Cut the dough into 6 pieces, roll each into a rope, and cut into 1.5-2 inch pieces.

Baking Soda Bath

  • Mix water and baking soda in a pot and bring to a boil. Boil pretzel bites for 10-15 seconds each. Drain and place on prepared baking sheets, sprinkling with salt.

Baking

  • Bake for 15 minutes or until golden brown. Serve warm.
  • Store leftovers at room temperature for up to 3 days and reheat as necessary.

Notes

Make sure not to over-boil the pretzel bites to avoid a metallic taste. You can refrigerate boiled or unbaked bites for up to 24 hours before baking.
