Cooking Steps

  • Roast the butternut squash at 425°F (220°C) until tender, about 25-30 minutes.
  • In a pot, sauté onion and garlic until soft. Add ginger, nutmeg, salt, and pepper, and cook for another minute.
  • Add roasted squash and vegetable broth, bringing to a simmer. Cook for 10 minutes.
  • Blend until smooth, stirring in coconut milk if desired.
