Ingredients
  

Crust

  • 1.5 cups flour
  • 0.5 cups sugar
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cups unsalted butter cut into pieces
  • 1 large egg

Strawberry Filling

  • 2 cups strawberries chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 0.25 cups sugar
  • 1 tablespoon cornstarch

Instructions
 

Preparation

  • Preheat oven to 375 degrees and grease a 8x8 inch pan or line with parchment paper.
  • In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the butter with a fork until the mixture is crumbly. Mix in the egg and vanilla.
  • Press half of the mixture into the prepared pan. Reserve the other half for later.
  • Toss strawberries with lemon juice and vanilla extract. Sprinkle with the sugar and cornstarch and toss to coat.
  • Spoon strawberries over the bottom crust, discarding any liquid at the bottom of the strawberries. Sprinkle reserved dough on top of the strawberries.

Notes

Note: If using a food processor, you can add all the crust ingredients to the food processor and pulse until crumbly. Then add the egg and vanilla and process until combined.
