Ingredients
  

Marinade

  • 1.5-2 lb. boneless skinless chicken breasts 2 medium-large breasts
  • ½ cup Italian dressing

Cooking Ingredients

  • 1 tbsp. avocado oil or other neutral, high heat oil
  • 1 tbsp. butter
  • 10 oz. cremini mushrooms sliced
  • ½ cup yellow onion sliced
  • 2 tbsp. water approximately
  • ¼ tsp. white pepper
  • ¼ tsp. black pepper
  • ¼ tsp. onion powder
  • ¼ tsp. garlic powder
  • ½ tsp. salt
  • 2 oz. Monterey Jack cheese sliced

Instructions
 

Preparation

  • Place chicken breasts on a plate or cutting board. Using a jacquard tool or fork, poke several holes in the meat, about 10 to 15 times on each side.
  • Wash hands thoroughly. Pour Italian dressing over chicken, coating it, and place in the fridge.
  • Let chicken sit in the marinade for 2 to 24 hours for optimal flavor.

Cooking

  • Preheat oven to 400 degrees F.
  • Heat cast iron skillet over medium high heat. Add oil and place chicken breasts in the skillet. Cook for about 5 minutes to brown, then flip and repeat on the other side. Remove chicken to a clean plate.
  • Reduce heat to medium. Add butter, then mushrooms and onions, sautéing until softened, about 5-7 minutes. Add water, scraping up the bits from the pan.
  • Add spices and stir. Move mushroom-onion mixture to the side of the skillet and place chicken back in, scooping the mixture over each piece.
  • Top the chicken with cheese slices and place in the oven.
  • Cook for 10 minutes, until chicken is cooked through and cheese is melted and starting to brown.

Notes

For best results, marinate the chicken longer for enhanced flavor.
