Ingredients
  

For the Chocolate Portion

  • 55 g dark chocolate coarsely chopped
  • 30 g sour cream at room temperature

For the Vanilla Portion

  • 115 g unsalted butter at room temperature
  • 300 g caster sugar or granulated sugar
  • 1 tablespoon vanilla or vanilla bean paste
  • 3 large eggs at room temperature (about 160g, not including the shell)
  • 170 g sour cream at room temperature
  • 185 g all-purpose flour
  • 0.5 teaspoon kosher salt (use less if using table salt or salted butter)
  • 0.25 teaspoon baking soda
  • softened butter for piping down the middle of the cake (optional)

Instructions
 

Preparation

  • Preheat the oven to 330°F / 165°C. Grease and line a 1 lb loaf pan with parchment paper.

Chocolate Portion

  • Melt the chocolate in 30-second intervals in the microwave, stirring between each interval, or using a heatproof bowl over simmering water. Leave to cool and fold in the sour cream once cooled.

Vanilla Portion

  • Cream together the butter, sugar, and vanilla until light and fluffy.
  • Add in the eggs one at a time, mixing well after each addition.
  • Add in the sour cream, and mix to combine. Combine the flour, salt, and baking soda in a medium bowl, then add to the mixture.

Assembly

  • Remove 250g of the vanilla cake batter and mix in the cooled chocolate mixture.
  • Blob the chocolate and vanilla batter into the pan in alternating layers, swirling as desired.
  • Bake the marble cake for 1 hour 15 minutes, checking for doneness.
  • Leave to cool in the pan for 15-20 minutes, then transfer to a wire rack to cool completely.

Notes

Some bubbles may occur in the cake due to swirling; ensure to bang the pan on the counter to remove them.
